About the Recipe

If you love fries, but don't love how unhealthy they are...this is for you! It's fast, easy, and these babies will satisfy your fries cravings every time.

Like any carb, you want to eat these with a good lean protein. However, they're perfectly healthy - just a little olive oil as fat, and just a little salt on the outside (not enough to hurt ya!)...and good, healthy potatoes.

Make them skin on to keep the vitamins and minerals from the potatoes, they're just as tasty as with skin off (which is fine too - still lots of good nutrition in those taters).

The key to fries is in the technique - this is a super easy recipe, but if you don't know the tricks, your fries won't be nearly as good. Enjoy!

Ingredients

  • 4 Russet Potatoes (any potatoes will work fine)

  • 2 tbsp Extra Virgin Olive Oil

  • 1 tbsp Corn Starch (optional - increases crisp)

  • 1/4 tsp Garlic Powdr (optional)

  • 1/4 tsp Onion Powder (optional)

  • 1/4 tsp Smoked Paprika (optional)

  • 1 tsp Sea Salt

Preparation

Step 1


Cut potatos lenghwise into thirds (or just large enough to fit into your chopper). If you do this with a knife, follow our "how to chop potatoes" guide to do it safely! Better yet, just order the chopper - it's cheap and you'll use it constantly!


Step 2


If you're not using the air fryer, reheat your oven to 425. Get an air fryer! It'll make your life so much easier (they really are amazing and they open up a whole new world of easy cooking).



Step 3


Put potatoes into a large bowl and cover with hot water. You don't need filtered water here, tap is fine, they won't absorb much. This step is simply to set the starches before further cooking.



Step 4


Drain the potatoes thoroughly and dry with a tea towle. Place back into the dried bowl.


Add all spices (except salt), the corn starch, and EVOO, and toss until the olive oil coats completely.


Step 5

Arrange fries in a single layer in your air fryer. They can be packed in pretty tight. If baking, arrange in a single layer on a sprayed baking sheet. Cover the sheet with foil.


Step 6

Cook in air fryer on high heat for 5 minutes, toss, and repeat. Keep doing this until they're as brown and crispy as you like. If you're baking, bake for 5 minutes, remove foil, and then bake for 15 to 20 minutes. You may need to rotate the pan once or twice to allow them to brown evenly.


Step 7

If you're baking in the oven, remove the pan and gently loosen the fries, trying to break them up. Give them a little toss (don't try to flip them, it's too hard, and not necessary), just to move them around a little. Continue baking another 5 to 10 minutes, or until they're as browned and crispy as you want.


Step 8

Add salt as desired. The key to not oversalting fries (and most foods) is to add the salt at the end.


You can experiment with all kinds of seasonings, not just the ones listed. A big part of the reason McDonald's fries are so good is that they use a seasoning that simulates the flavor of beef flavoring - which is why the Smoked Paprika tastes so good on these. Try whatever you like!
